1. Whisk the eggs with the sugar.
Beat the eggs and sugar with an electric mixer until light and fluffy.
2. Add the wet ingredients.
Add the oil (or melted butter if you prefer a traditional version) and the room-temperature milk. Continue mixing.
3. Mix the dry ingredients.
Add the sifted flour, baking powder, and lemon zest. Gently fold from the bottom up to avoid overmixing.
