
Recipe for fried potatoes and onions

Step 1: Prepare the potatoes and onions
Peel the potatoes and cut them into 0.6 cm slices. Cut the onion into thin, even slices. Set aside.
Step 2: Heat the oil
In a large frying pan or cast iron skillet, heat 3 tablespoons of vegetable oil (or bacon fat for extra flavor) over medium heat until shimmering.
Step 3: Cooking the potatoes and onions.
Arrange the sliced potatoes and onions in the pan in an even layer. Sprinkle with salt, black pepper, paprika (if using), and garlic powder (if using). Stir to coat the potatoes and onions well with the oil and seasonings.
Step 4: Brown the potatoes and onions. Cook
the potatoes and onions for 20 to 25 minutes, stirring occasionally, until the potatoes are golden brown and crispy around the edges and tender in the center. Be careful not to stir too often, as this will prevent them from becoming crispy on the outside. If necessary, cover the pan for part of the cooking time to help the potatoes cook through, then uncover them to allow them to crisp up.
