History and curiosities
La Viña Cheesecake was created in the 1990s at the La Viña bar-restaurant , located in the old town of San Sebastián (Basque Country). Its creator, chef Santiago Rivera, was looking for a simple and authentic dessert. Today, this cheesecake has become so popular that it is known as “the Basque cheesecake” or Basque Burnt Cheesecake , with versions in New York, Tokyo, and London.
Its rustic appearance and golden surface make it unmistakable, and its flavor has won over everyone from haute cuisine chefs to lovers of homemade food.

1 kg of cream cheese
- 500 ml of whipping cream (heavy cream)
350 g of sugar
7 large eggs
- 30 g of wheat flour
1 tsp vanilla extract (optional)
