Crack and beat the eggs: Start by beating the eggs in a bowl. Add a pinch of salt and, if you want the mixture to be creamier, add a little milk or cream. You can add milk to the eggs to make them creamier, but it’s not necessary. Use a fork to thoroughly mix the egg yolks and whites. You don’t need to overdo it here; just mix all the ingredients together.
Heat your non-stick frying pan over medium-low heat. Add about half a tablespoon of butter to the pan. Use just enough to cover the bottom of the pan. Let it melt completely, but avoid letting it brown.
Prepare the eggs: Place the beaten eggs in the pan. Let them separate for about 20 seconds without touching. Then, use a spatula to move the eggs from the edges to the center of the pan.
