Fluffy and Fluffy Pancakes

1 pinch of salt

60g of melted butter

1 tsp vanilla extract (optional)

Instructions :

Prepare the dry ingredients:

In a large bowl, sift together the flour, yeast, sugar and salt.

Mix the liquid ingredients:

In another bowl, whisk the eggs with the milk. Add the melted butter and vanilla extract, if using.

Assemble the dough:

Pour the liquid ingredients into the bowl containing the dry ingredients. Gently mix with a whisk or spatula just enough to incorporate (do not overmix – small lumps are normal!).

 

Resting the dough (optional but recommended):

Let the batter rest for 10 to 15 minutes at room temperature. This allows the yeast to do its work and results in even fluffier pancakes.
