Chef’s tip for finger-licking crispy fries

Start by cleaning and washing the potatoes.
Then, and this is an essential step, cut them carefully.

For a perfect cut, preferably use a mandoline or a slicer.

If you don’t have one, use a sharp knife to cut medium slices.

a maximum of one centimeter thick. Each slice is then cut into sticks.

Plunge the fries into a bowl of cold water.

Leave them like this for 20 minutes to eliminate excess starch.
