Zucchini, Potato, Carrot and Cheese Muffins

👩‍🍳 Instructions

1️⃣ Preheat the oven to 180°C (350°F) and grease a muffin tin or line it with paper baking cups.
2️⃣ In a bowl, combine the grated zucchini, potato, and carrot.
3️⃣ Add the eggs and oil, then mix well.
4️⃣ Stir in the grated cheese, flour, baking powder, salt, pepper, and herbs (if using). Mix until a smooth batter forms.
5️⃣ Divide the batter among the muffin cups, filling them two-thirds full.
6️⃣ Bake for 20 to 25 minutes , until the muffins are golden brown and spring back when lightly pressed.
7️⃣ Let cool for a few minutes before serving.
