Ingredients:
4 cups mushrooms, sliced (about 200g)
2 tbsp butter (30g)
1 tbsp olive oil (15ml)
1 medium onion, finely chopped (about 1/2 cup or 75g)
2 cloves garlic, minced
1/2 cup heavy cream (120ml)
1/2 cup chicken or vegetable broth (120ml)
1/4 cup grated Parmesan cheese (25g)
Salt and pepper to taste
Fresh parsley, chopped for garnish (optional)
Directions:
Step 1: Heat butter and olive oil in a large skillet over medium heat. Once the butter has melted, add the chopped onion and cook until softened, about 5 minutes.
Step 2: Add garlic and sliced mushrooms to the pan. Cook until the mushrooms release their moisture and begin to brown, about 7-10 minutes.
Step 3: Pour in the broth and bring the mixture to a simmer. Let it cook for 5 minutes, allowing the flavors to meld.
Step 4: Reduce the heat to low, then stir in the heavy cream and Parmesan cheese. Simmer for an additional 3-4 minutes, until the sauce thickens. Season with salt and pepper to taste.
Step 5: Garnish with chopped parsley before serving, if desired.
