How to Make Cheesy Bacon Potato Bake
Preheat & Prep:
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
Mix the Filling:
In a large bowl, combine half the cheddar, sour cream, milk, melted butter, bacon, onion, garlic, paprika, thyme, salt, and pepper. Stir until creamy and well mixed.
Layer the Potatoes:
Arrange half the sliced potatoes evenly in the dish. Spread half the cheese mixture on top. Repeat with remaining potatoes and cheese mixture.
Bake Covered:
Cover tightly with foil and bake for 60 minutes.
Finish Uncovered:
Remove foil, sprinkle remaining cheddar (and extra bacon if desired). Bake uncovered for another 20–30 minutes, until golden and bubbly.
Rest & Garnish:
Let cool for 10 minutes, then top with fresh chives before serving.

Slice potatoes evenly for consistent cooking.
Add a pinch of cayenne for a gentle heat.
Use a mandoline slicer for thin, uniform slices.
Shred your own cheese for better melting (pre-shredded often contains anti-caking agents).
Make it vegetarian by skipping the bacon — it’s still delicious!
