Tuna and Vegetable Patties

Ingredients (makes about 6 pancakes)
2 cans of tuna in water or oil (drained)
1 finely grated carrot
½ grated and drained zucchini
½ finely diced green bell pepper
2 eggs
½ cup breadcrumbs or ground oats
1–2 tbsp. all-purpose flour
Salt and pepper to taste
Oil for frying

Preparation:
1. In a bowl, mix the drained tuna with the carrot, zucchini, and green bell pepper.
2. Add the eggs, breadcrumbs, and flour to bind the mixture.
3. Season with salt and pepper.
4. Form into small, round patties.
5. Cook in a skillet with a little oil over medium heat until golden brown on both sides.
6. Serve with a salad or fresh salsa.

Broccoli and Cheese Pancakes

Ingredients (makes about 6 fritters):
2 cups cooked and finely mashed broccoli,
1 cup shredded cheese (mozzarella, manchego),
2 eggs
, 1/2 cup breadcrumbs or ground oats,
2 tbsp all-purpose flour (or cornstarch),
1 finely crushed garlic clove
, salt and pepper to taste,
vegetable or olive oil for frying

Preparation:
1. Cook the broccoli in salted water until tender, then finely chop it.
2. In a bowl, combine the broccoli with the grated cheese, eggs, breadcrumbs or ground oats, flour, and garlic.
3. Season with salt and pepper, and mix until you have a batter that can be formed into patties.
4. Shape the batter into round, slightly irregular patties.
5. Heat a little oil in a skillet and fry the patties over medium heat until golden brown on both sides.
6. Drain on paper towels and serve.
