Ingredients
1 cup (90 g) oatmeal

1 apple, peeled, cored, and diced

1 banana, sliced or mashed

1 tsp vanillin (optional)

50 g oat flakes

80 g chopped nuts (e.g., almonds, walnuts, pecans)

50 g dried cranberries

1 tbsp stevia (or to taste)

1 tbsp sesame seeds

Step-by-Step Cooking Directions
Preheat the oven to 180°C (350°F). Line a small baking tray or loaf pan with parchment paper or lightly grease it with oil.

Mash the banana in a large mixing bowl until smooth. This will serve as the natural sweetener and binder for the oat bars.

Add the diced apple to the mashed banana. Stir to combine.

Mix in the oats, oat flakes, vanillin (if using), chopped nuts, dried cranberries, stevia, and sesame seeds. Stir everything together until the mixture is evenly combined.

Let the mixture sit for 5 minutes so the oats can absorb the moisture from the fruit.

Transfer the mixture into your prepared baking dish. Press it down firmly using the back of a spoon or spatula to create an even layer.

Bake in the preheated oven for 20–25 minutes, or until the top is lightly golden and the edges are set.

Remove from the oven and allow to cool in the pan for 10 minutes. Then lift the bars out using the parchment paper and let them cool completely on a wire rack.

Slice into bars or squares and store in an airtight container at room temperature for 3 days or in the fridge for up to 7 days.
