6. Assembling the pastries:
Place a sheet of puff pastry on a lightly floured work surface and cut it horizontally in half. Place a line of filling down the center of each strip, leaving a space at the edges.
7. Seal the rolls:
Fold the puff pastry over the filling and press the edges to seal. Use a fork to make decorative cuts and seal.
8. Cut and place:
Cut each long roll into 3 or 4 equal portions and place them on the tray with the seam facing down.
9. Brush and decorate:
Brush the top with the remaining beaten egg. If desired, sprinkle with sesame or poppy seeds.
10. Baking:
Bake for 20 to 25 minutes or until the puff pastry is puffed and golden.
11. Let cool and serve:
Allow to cool slightly on a wire rack before serving. They are best warm, but also delicious at room temperature.
