Creamy Chicken and Mushroom Skillet

1. Poach the chicken
In a large pot, combine 2 bay leaves, 1 tablespoon of black peppercorns, 1 tablespoon of salt, 2 garlic cloves, and the juice of half a lemon. Add the chicken breasts and cover with water. Bring the mixture to a boil over medium-high heat. Once boiling, immediately cover the pot with a lid and turn off the heat. Let the chicken sit in the hot water, covered, for 30 minutes. This method results in perfectly tender, juicy chicken without overcooking.

2. Sauté the mushrooms
While the chicken is poaching, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced mushrooms and sauté for about 4 minutes, stirring occasionally, until they are browned and caramelized.

3. Build the flavor
Add 2 minced garlic cloves to the mushrooms and season with ½ teaspoon each of salt and black pepper. Stir and cook for another 30 seconds until the garlic is fragrant.

4. Deglaze and simmer
Pour in 80 ml (⅓ cup) of white wine to deglaze the skillet, scraping up any flavorful bits stuck to the pan. Simmer for about 1 minute, allowing the alcohol to evaporate.

5. Add liquids and simmer
Add 160 ml (⅔ cup) of chicken stock, followed by 120 ml (½ cup) of sour cream. Stir to combine and reduce the heat to low. Simmer gently until the sauce thickens slightly, about 1–2 minutes.

6. Stir in Parmesan
Add 50 g (½ cup) of grated Parmesan cheese and stir until melted into the sauce. The result should be a creamy, luscious sauce with a rich, savory aroma.

7. Add parsley and serve
Remove the lid from the poached chicken and transfer the breasts to a cutting board. Slice or shred them and add to the mushroom sauce, or serve on top. Garnish everything with fresh chopped parsley. Serve hot with your favorite sides.
