Furthermore, excess starch makes them mushy because they absorb too much oil. A solution to this problem? A secret ingredient: vinegar. Its acidity slows down the breakdown of pectin, preserving it during cooking. Pectin is a soluble fiber that contributes to satiety, regulates fat absorption during digestion, and maintains healthy bowel movements.
